
This Pouilly-Fumé, crafted from Sauvignon Blanc, draws its distinctive character from clay-limestone, flint-clay and Portlandian limestone soils, which lend depth, minerality and complexity.
Aged for six months in stainless-steel vats on fine lees, it pairs beautifully with shellfish, cured salmon and Crottin de Chavignol. It can be enjoyed young or cellared for three to five years to reveal further elegance.

This cuvée, sourced from old Sauvignon Blanc vines aged 40 to 50 years, captures the full richness of the flint-clay soils from which it originates. After eight to ten months of ageing on fine lees in temperature-controlled stainless-steel vats, the wine reveals great aromatic complexity and a distinctive mineral profile.
With a cellaring potential of five to seven years, it pairs superbly with refined dishes such as scallops, pike-perch with beurre blanc, Bresse chicken with morel mushrooms or monkfish with a rich sauce.
